Our experience concerning selection and merchandising of food commodities of basis goes up to the second half of the 19th century. Our knowledge concerning coffee goes up to 1900. In those times, it was necessary to buy slaves in Sudan to grind the grain. And to popularize consumption, we needed to fit out coffee shops.

Coffee ?
Coffee trees measure 7 to 8 meters and are maintained in culture to 2 meters. They provide drupes (cherries of coffee) to 2 cores, first green then red, of which each contains a seed: the coffee bean. These are dried to air (coffee no washed) washed either for the extraction of seeds (washed coffee), roasted to a temperature of 200 then to 250°C. The country of coffee origin is Yemen. Coffee is first consumed in Africa like food, then as drink to the 15èmth century: the Moslem world knows to this time a public coffee proliferation.
